Abstract
Image analysis was used to estimate the cell concentration of koji fungi on rice koji. Fungi, rice and background were identified and visualized as a trinary image based on the brightness classified at 256 levels. The sums of pixels corresponding to koji fungi (S_A) and rice (S_R) were calculated and the S_A/S_R ratio was found to be strongly correlated with the actual value of the cell concentration of the fungi. The method could be applied to monitor growth in the koji making process.
