Abstract
The structural change of κ-carrageenan gel in the gel-to-sol transition was observed with the small-angle neutron scattering (SANS). The SANS intensity decreases on approaching to the transition point from the gel phase. On the other hand, the observed gyration radius does not change in the whole region of the gel phase. The fact means that the number of the cross link points decreases but their size keeps almost unchanged in the gel-to-sol transition.
