Water molecules bound to κ-carrageenan in the gel and sol states

Abstract

The motional state of water molecules in gel and in solutin of k-carrageenan is studied by nuclear magnetic resonance. Three different types of water molecule are observed; the free bulk water molecule, the water molecule strongly bound to k-carrageenan and the water molecule weakly bound to the gel network. The results are discussed in terms of the proposed gelation mechanism of k-carrageenan.
